I love the sweet and tangy taste of fresh pickles. I had quite a few cucumbers in my CSA bag this past week so I thought it would be fun to make a few batches of homemade pickles to enjoy on sandwiches or just as a snack in the coming weeks. Did you know that it can be super easy to make your own pickles? It's true! There are all sorts of methods out there but for simple, quick pickles try this.
Slice up your veggies and place in a glass jar. I like to use cucumbers for classic pickles but really you can pickle just about anything. Try root vegetables like radishes and carrots. Place slices veggies in the jar and add a few peppercorns and dill sprigs.
In a bowl combine 1 cup water, 1 cup white vinegar, 2 teaspoons salt and 1 tablespoon sugar. Stir to dissolve. Pour into your veggie filled jar(s). Seal and leave in the refrigerator overnight. These will be ready the next morning and can last up to a month. The longer they set the softer and more... uh... pickled they will get. So if you like a little crisp to your pickle don't wait too long.
It's that easy! These pickles are perfect for sandwiches or snacking. xo. Emma

I absolutely love making things pickled. I don't add sugar just because I don't like sweet to my pickles but use the rest of your recipe to a T. I love to make green beans this way, and I pre-cook baby carrots for about five minutes, cut them in half and add hot peppers to the mix. YUM!

Done. I can't wait to crack into these tomorrow. I adore a real crunchy pickle. I added a few red pepper flakes to one batch. I hope it turns out well...and doesn't completely set my mouth on fire. Fingers crossed.
Also, I'm totally inspired to find a CSA box provider for my home. The Hubs and I need more intentional instead of accidental eating.
Cheers!

My favourite is a controversial one - Pickled Eggs. I am addicted. My Mum makes me a huge jar full of them at Christmas time. Yum... xxxx

Wow! it seems so easy! I'm going to try it this weekend.
Question: Do you have to do anything special to "seal" the jars or is it just as simple as putting the lid on?
