I love baked oatmeal. We first showed off this method back when we did Homemade Oatmeal 9 Ways. You can add all sorts of mix ins and create any kind of flavor combination to suit your season or favorite flavors. The other morning I decided to try a black cherry version. Here's what I did…
Black Cherry and Walnut Baked Oatmeal, makes 4 servings.
Needed: 1 3/4 cup oats, 1/2 cup sugar, 1 teaspoon baking powder, a pinch of salt, 1/2 cup chopped walnuts, 2 cups pitted and chopped cherries, 1 1/4 cup milk, 1/2 cup cream, 1/2 teaspoon vanilla extract, 1 egg and 3-4 tablespoons melted butter.
In a bowl combine the oats, sugar, baking powder, salt and walnuts. Stir to combine. In another bowl combined the milk, cream, egg, extract and melted (and slightly cooled) butter. Whisk to combine. Pour the milk mixture over the oat mixture, add the chopped cherries and stir. Pour into a buttered baking dish (I use a bread loaf pan for this amount) and bake at 375 F for 30-35 minutes.
Serve warm with a little maple syrup drizzled over the top. Enjoy! xo. Emma
What type of oatmeal should be used? I have steel cut Irish oats, old fashioned Quaker Oats and also fast cooking oats by quaker, not instant which I won’t buy/use. The cooking times and fluid to oats ratio is very different depending o which oats. WWANT TO TRY! Have great dried cherries and walnuts, just need your guidance! Thank you!

So i got home after work, and i couldnt stop thinking about wanting to make this.. so i did! I used blueberries instead of black cherries, and it came out DELICIOUS. even had some for breakfast!! Thanks!
