This is a fun variation on cheesecake. Sort of. I mean... it's a pie. Not a cake. And it's less sweet than cheesecake. So there's that too. You can add any kind of berries or fruit that you have to the top. We decided to go with raspberries!
Ricotta and Raspberry Pie, makes one
Needed: pie crust (make one or buy one, I cheated and bought one), 10 ounces ricotta cheese, two eggs, 1 tablespoon brown sugar, 1 tablespoon white sugar, a pinch of salt and 2-3 handfuls of fresh raspberries.
Preheat the oven to 375 F and bake the pie crust for 8 minutes.
Mix together the cheese, eggs, sugars and salt. Pour into the partially baked pie crust. Add berries to the top. Bake for 40-42 minutes until set. Allow to cool before serving.

i am thinking of trying this with strawberries. and then serve it with this really nice dark chocolate balsamic drizzled over it (we love balsamic vinegar and fresh, sweet strawberries...such a great treat). thank you for this recipe (looks delish, by the way) and kickstarting the ideas!!

This looks so delicious! What a great way to use fresh summer fruits and berries while they're in season. I just bought a big box of blueberries, so I think I'll try a blueberry version. I love desserts that aren't too sweet, so this looks perfect!
