I'm not normally a salad person. All my close friends know this about me; I'm just not that into salads. BUT. Lately I've caught myself eating more and more salads. I think it's the weather. Super hot days do not inspire brilliant baking ideas. Roasted anything sounds just too hot for a later summer lunch. So I've been experimenting with different salad dressings and this one is probably one of my absolute favorites!
Sweet Ginger Dressing, makes about 1 cup. Recipe adapted from here.
Needed: 2 tablespoons fresh grated ginger, a heaping 1/3 cup peanut oil (or vegetable oil), 1/3 cup rice vinegar, a scant 1/3 cup honey and pinch of salt and pepper.
Add all ingredients to small jar, place the lid on and shake well. Store left over dressing in the refrigerator for up to a week.




That salad looks amazing. What's in the rolls? I'd love to try them.

Excellent! Could this be converted into a dipping sauce? Also, never would of thought to keep dressing in a mason jar even though its an obvious idea.
