This past summer my husband and I got into the groove of enjoying daily salads. It was a fun challenge, but from time to time I found myself missing my favorite food- sushi! When I saw Talia's recipe for sushi bowls I got inspired to try sushi as a salad! I surprised Jeremy with this offbeat salad and he wanted me to make him a second one later that day. Success! Here's the recipe-
Sushi Salad, serves 2-4
Needed: 1 ten oz. bag of lettuce (I like to combine a spring mix with a romaine mix),4 sticks of crab (or lobster or imitation crab), 1/2 an avocado, 1/2 a lemon, sriracha, wasabi sauce, mayonnaise, roasted sesame seeds, seaweed sheets.
In the bottom of a large serving bow, combine 2-3 tablespoons mayonnaise (depends on how much salad you are making, use an amount proportional to how much salad dressing you like on a salad), a teaspoon of sriracha (more if you are feeling daring) and a teaspoon of wasabi sauce. Next, add the juice of 1/2 a lemon and mix your sauce with a spoon. Then add all the lettuce and toss the salad in the dressing. Sprinkle sesame seeds to taste. (I'm "enthusiastic" about sesame seeds so I always over-do it!) Add a little more wasabi sauce and some cut up pieces of seaweed paper, then mix your salad again. Use a fork to shred your crab meat and add it to the top along with half an avocado. Enjoy! I hope you love it as much as we do! Have a great weekend, Elsie
