I usually lean more in favor of creamy soups. It doesn't have to actually have cream in it. It could be completely vegan, I just like a smooth soup. But every now and I again I do love a good black bean soup. It's sort of like a cozy burrito. (Wait, is that weird? Forget I said anything.) This soup is certainly cozy and a fantastic quick dinner idea. Bonus: it's vegan and manages to be pretty healthy while still very flavorful.
Black Bean Tortilla Soup, makes 2 servings
Needed: 3-4 tablespoons olive oil, 1/3 yellow onion, 1 red bell pepper, 2 chipotle peppers in adobo sauce, 1/4 teaspoon cumin, salt + pepper, 1 1/2 cups veggie stock, 1 can black beans, homemade tortilla strips, avocado and cilantro to serve.
In a pot heat the olive oil over medium heat. Finely chop the onion and bell pepper, saute in the oil. Season with cumin, salt + pepper. Once the onions have softened add in the chopped chipotle peppers. If you like a lot of spice, add a teaspoon or two of the adobo sauce too. Now add in the stock and rinsed beans and continue to cook until warmed through.To make homemade tortilla strips all you need are corn tortillas and oil! Thinly slice your corn tortillas and then pan fry in 1/4 inch oil until crispy. Serve with soup along with a few slices of avocado and some chopped cilantro. Enjoy! xo. Emma

I love all kinds of soups! But tortilla soup is on the top of the tops. Especially when its smothered with cheese.
