I just can't seem to put my ice cream maker up guys! This is cinnamon dolce ice cream. It's inspired by the Starbucks flavor and Biscoff Cookies
. Does anyone remember when Delta airlines used to give complimentary Biscoff Cookies on all their flights. Man, those were the days.
If you can't tell, I'm a big cinnamon fan. This ice cream is a little different because it is made from ricotta cheese. This gives it a slightly different texture than custard based ice cream, and it's less sweet. Don't get me wrong. It's still ice cream (there's plenty of cream and sugar involved), but it's just a little more grown up. To me this is the perfect ice cream companion to an evening cup of coffee.
Cinnamon Dolce Ice Cream, makes about 1/2 quart
12 oz. ricotta cheese
1 cup milk (I used 2% but whole is even better)
1/2 cup brown sugar
1/2 cup sugar (regular/granulated)
1/2 teaspoon vanilla extract
2 teaspoons cinnamon
1/2 cup heavy whipping cream
Cream together the ricotta cheese and milk until smooth. Stir in the remaining ingredients and refrigerate for 2-3 hours (or overnight). Pour the cold batter in to your ice cream maker and follow the manufacturer directions for use.Happy ice cream making! xo. Emma

This looks delicious! As a huge fan of both Starbucks cinnamon dolce and biscoff cookies, I'll be trying this soon. I actually had complimentary cookies on a tiny Delta flight last October. Brought back memories of my very first flight.

I DO remember Delta giving those! Yum. I'm totally intrigued by an ice cream with cheese and cinnamon, plus the fact that it just looks beautiful. Is that weird to say? :)
