I made this for lunch earlier this week and today (being cloudy and chilly where I live) I'm wishing I had another bowl. This is not an overly spicy soup. It also boasts sweet pineapple and a little honey. But it is one of those dishes that can make your nose run a little—a really great soup if you are hungry and maybe starting to get a cold.
Was that gross? Should I have left that part out? Hmmm...Spicy Pineapple and Shrimp Soup, makes 4 servings
6 oz frozen peas, thawed
1 red bell pepper
1/2 pound shrimp, shelled
15 oz pineapple chunks (fresh or canned)
1/2 cup pineapple juice
1 1/2 cups vegetable stock
2 teaspoons corn starch
2 teaspoons honey
2 teaspoons soy sauce
1/2 teaspoon Sriracha
1/2 teaspoon ground ginger
1/4 teaspoon red pepper
2 teaspoons rice vinegar
rice for serving
I made this in a crock pot, but you could also easily make this on the stove. Whisk together the pineapple juice, stock, corn starch, honey, soy sauce, Sriracha, ginger and red pepper. Heat over low heat until warmed through then add in the pineapple, chopped bell pepper, peas and shrimp. Cook until everything is done and warmed through. Stir in the vinegar just a few minutes before serving. Serve over a small bed of rice. Enjoy! xo. Emma




Sounds absolutely delicious. There's nothing wrong with a good "make your nose run" kind of soup. Especially in the winter!
