This is one of those recipes that I feel proud to pass around the office or bring to a family get together. I'm not saying that it's the ultimate, most perfect, absolutely divine, everybody-always-loves-it-as-much-as-me, final say in hummus recipes. That would just be silly. But I will say that this hummus is my favorite. It sort of tastes like pizza.
Oh no! I ruined it for you didn't I? Well listen up pizza haters: Try this. Even if you don't like pizza (weirdos!). Even if you don't like hummus (double weirdos!!). It's super easy to throw together, is pretty healthy for you, and tastes wonderful. Unless you're a weirdo, which I feel like I've already covered.
Sun-Dried Tomato Cilantro Hummus, makes about 3 cups
1 can chickpeas
1/3 cup sun-dried tomato spread (found mine in the produce section)
2 tablespoon tahini paste
1/4 cup fresh cilantro
1 teaspoon salt + more to taste
1/3 cup olive oil
pepper and red pepper to taste First you need to rinse and remove the skins from the chickpeas. Most canned chickpeas still have the skins on them. There may be a brand out there that doesn't. But better safe than sorry. If you've never removed the skins you can see me doing this here.
Now place the first five ingredients in your food processor and blend until combined. Now slowly drizzle in the olive oil as the food processor is on low. If your processor doesn't allow for this then try adding the oil in three steps, blending in between. Try it and add pepper, salt and red pepper to taste. If you have a lemon, squeeze it over just before serving.I like to serve hummus with cucumbers and crackers. Other great options include: carrot sticks, celery, pita, tiny toast (totally a thing) or beef jerky (jk, weird).

yummmmmmmmm... i love these hummus variations you guys are doing (even though they always make me hungry!) Maybe you could make it a regular/series thing, adapting a different dip or dish in a couple of different ways?

Houmous is one of my favourite dips, and I love variations of it. And the idea of pizza houmous is really intriguing, definitely going to give it a try. It looks yummy!
